Edible Insects: Introducing students to a sustainable source of protein

AIS Vienna celebrated Earth Day on April 22 in both the Environmental Science and Advanced Research classes by learning about edible insects. ZIRP, a Vienna based company, held a presentation on the history of entomophagy – students were shocked to learn that 2 billion people worldwide have insects as part of their regular diet. Compared to other protein sources, insect protein creates far fewer greenhouse gasses and requires significantly less water and arable land. Students tried protein bars and brownies from ZIRP to rave reviews. We were inspired by an innovative idea to reduce our emissions that was locally based.
